Asian Fish Curry with Rice
Curry – when I was quite small I was convinced it was some kind of herb like leek or basil, but it turned out to be a food. By the way, ‘curry’ is the Tamil equivalent of ‘sauce’, as is ‘salsa’ in Spanish and ‘soust’ in Russian. Since curry is a sauce, you can put it on anything – snacks, bread, cauliflower or potatoes, the choice is yours. For us, we chose to make a spicy fish curry with Härmavilja Wok Mix, served with jasmine rice.
Having grown up on my grandmother’s baked potatoes, minced meat sauce and other European dishes, all sorts of Asian-inspired dishes have always refreshed me – oh the different flavour combinations you can make with one perfectly light fish curry with rice.
Boil the rice and then get to work on the curry, if you’re following our recipe to the letter remember that the dish comes out nicely spicy thanks to the chilli. Of course, you can also play with the recipe, so feel free to try different flavours! As a proper fish curry also calls for good fish, we found fresh salmon from the fish menu to add to our dish, which we cut into tasty pieces and then added to the sauce.
If the local veggies aren’t ripe yet, my preference is always to use frozen vegetable mixes – firstly they are conveniently already chopped, secondly they don’t have added preservatives that should keep them looking fresh on the supermarket shelves for a long time. With the frozen wok mix of heirloom Vegetable Recipes, you can also add a fresh and healthy addition to your diet in late spring. Add the Vegetable Recipes to the salmon and curry mix, along with coconut cream or milk and seasoning.
