Fair potato stuffed with chorizo and Joselito sausage recipe

Together and scrambled, first cousins, hand to hand combatants… chorizo and Joselito sausage meet in this recipe to create a need for many, and who does not remember with gastronomic love those fair potatoes? Roasted and stuffed with a thousand possibilities, sweet and tasty, perfect for long days of fun.
Ingredients
. Medium/large potatoes, 2 u Joselito sausage, 3 slices 0.5cm thick Joselito chorizo, 2 slices 0.5cm thick Olive oil, 1 tbsp Salt, c/s Black pepper, c/s Butter, 2 tsp Melted cheddar cheese or cheddar cream cheese, 3 tbsp Edamame, 20 pods Crumbled feta cheese, 2 tbsp Chopped cherry tomatoes, 4 u Chopped shallot, 1 u
Step 1
Preheat the oven to 180ºC, place the potatoes – previously well washed – in a dish suitable for it and sprinkle them with a little olive oil and salt. Bake them in the oven for 45-60 minutes, or until they are tender when pierced. We could also wrap them in aluminum foil but we would lose the outer crust.
Step 2
Meanwhile, peel the salchichón and Joselito chorizo to remove the outer skin and cut slices that we will then chop into strips to obtain small squares.

Remove the pods from the edamame, which will have been previously cooked in plenty of salted water.
Step 4
Once the potatoes are ready, and being very careful not to burn them, empty them slightly and open them a little with the help of a knife and a spoon. Once emptied add a pearl of butter and let it melt with a little salt and black pepper.

It is now time to fill them with crumbled feta cheese, melted cheddar cheese, plenty of chorizo and Joselito sausage cubes, chopped cherries, finely chopped shallot and edamame. On top we can put a little more feta cheese, cheddar cheese and also diced sausage and chorizo. a delight!
Tricks and Tips
If you want to shorten the cooking time a little, you can previously cook the potatoes in the microwave for 15 minutes, covered in a bowl with film and a few drops of water. Once cooked you will only have to put them in the oven at 210ºC to brown and form a layer on the outside.

No doubt, these fairy potatoes will also remind us of the British Jacket Potatoes that abound in the street carts of the island in winter season becoming a quick but natural and delicious meal to warm up. Here we associate them more to those moments of village fairs and the fillings, as in England, can be infinite.
