Tagliatelle carbonara by Pavel Berky

Recipe for homemade pasta and its cooking according to Pavel Berky. He prepares, for example, Italian Carbonara from homemade pasta.

Ingredients:

Homemade pasta: 130 g of plain 00 type flour (+ about 20 g – if needed) 50 g semolina flour 2 pcs large eggs (or 3 smaller ones) Carbonara: 150 g pancetta or bacon 50 g parmesan cheese + extra for service 4 pcs yolks black pepper whole olive oil salt

Procedure:

Sieve 130 g of plain 00 type flour and 50 g of semolina flour on a work surface. Make a well and crack 2 whole eggs into it. Make a dough, then wrap in cling film and leave to rest for at least 30 minutes.

Divide the dough into 2 parts. First roll out each part by hand into a thicker pancake. Set the pasta machine on the highest setting and sprinkle a little flour over the dough to prevent it from sticking to the rollers when you run it through. Run the pancake through twice on the highest setting and then reduce the setting with each pass until the penultimate setting. Roll out the second pancake in this way and then the sheets of dough can be run through a special tagliatelle attachment or cut with a knife.

Set the cut pasta aside and prepare a pot of well-salted water (the water should be salty like the sea) on the stove and bring to a boil.

Carbonara. Heat two tablespoons of olive oil in a large pan, add the chopped pancetta and fry until golden brown. Put 4 egg yolks and freshly ground pepper in a bowl. Whisk the mixture with a fork and add 2-3 tbsp boiling water from the pasta pot. Add 50 g of grated Parmesan cheese, whisk once more and set aside.

Put the pasta in the boiling water and at the same time reheat the pan with the pancetta. Boil the pasta for 3-5 minutes, then do not drain, but use a colander to transfer directly into the pan with the pancetta. Add 3-5 tbsp of the water in which the pasta was cooked. Pour the beaten egg yolks with Parmesan over the pasta. Immediately set the pan aside and stir the mixture well so that the egg yolks do not curdle, but a creamy sauce is formed. If you think the pasta is still too dry, add a few more tablespoons of water from the pot.

Serving.

Recommendation:

Instead of tagliatelle pasta, you can use any type of pasta – for example, spaghetti, linguine and others.
