Salmon in orange marinade with citrus salad
Last year we celebrated Women’s Day with a proper women’s party – we looked after the festive table and enjoyed ourselves in large company. This year is a little different. We’ll be celebrating with a private family of women, but I’m still planning to set the table glamorously and offer something a little more special than the everyday. I’ll also share with you some tips on how to make a more modest and homely Women’s Day memorable. These nuggets of wisdom may be especially useful for men who may be stuck with surprising their wives in the run-up to the big day.
I chose salmon for its wholesomeness. Fish has a lot of good things in it – vitamins, minerals and essential omega-3 fatty acids. Women value healthy eating and I am definitely in the same boat as them on this. Salmon is of course a definite go-to and can be served with a wide variety of accompaniments. The 103rd anniversary of the Republic of Estonia was recently celebrated. M.V.Wool’s gray salmon rolls were made for the 103rd birthday of the Republic of Estonia, and they were amazing! This time we’ll try salmon in steak form – salmon in orange marinade, which is a breeze to prepare. The salmon is already pre-packed in a foil baking tray, so you don’t really have to do anything other than remove the wrapper, poke a few air holes and place the fish in the oven with the tray.
With what to serve the salmon? For Women’s Day, a lighter accompaniment might be a good idea. After all, spring is on the way and with each passing day more light comes into our lives – our minds become brighter and so do our appetites. That’s why I’m going to skip the cereal this time and go for the salad. It’s a creative way to approach a salad, and with the right combination of ingredients, it brings out the salmon’s specialness and compliments it.
Recently, I tried making a spring citrus salad, with the idea of serving it alongside salmon for Women’s Day. Salmon marinades are often something citrusy, and this time it’s perfect to serve salmon with a citrus salad. It does not require masterly cooking skills to prepare either. All you need is one avocado, 3-4 oranges (both red and yellow), and 2-3 handfuls of fresh salad leaves. The salad is made juicy by a special salad dressing consisting of 1 tablespoon of orange juice and 2 tablespoons of olive oil. Add 1 teaspoon of honey and 1-2 teaspoons of lemon juice. Here the citrus flavours come out clearly, which increasingly enliven the flavours of the main course, the salmon. Mix the salad with the dressing, garnish with blueberries and raspberries and voila! – a glamorous-looking, delicious Women’s Day dinner is ready!
A Women’s Day dinner could be a gift for a loved one in its own right, you just have to put in a little effort and pay attention to the different nuances. That’s exactly what you can do with this dinner. A classic salmon and a slightly exotic citrus salad on the side create a rich combination. That’s what a romantic ladies’ dinner should be! Maybe you’ll even try it this year?
