Sopa di tomate e ovos, that’s the original name of this Portuguese recipe for tomato soup.
1. Fry the onion in butter until golden
2. Add peeled and sliced tomatoes and chopped parsley, simmer until soft
3. Pour in the stock as the tomatoes boil, strain the soup and reheat
4. Season with salt and pepper and sprinkle each portion on the plate with chopped eggs and parsley
