Wild boar fillet with rosehip sauce recipe

4 servings Fillets 800 g wild boar fillets 4 g of ground pepper 4 g of salt 400 ml red wine 4 g juniper berries 400 ml of oil pears 500 ml pear juice 5 g of ground turmeric 11 g of dried rosemary 1 teaspoon honey Sauce 100 g carrots 100 g celery 100 g parsley 100 g onions 500 g crystal sugar 400 ml red wine 1 tsp allspice 1 tsp peppercorns whole black bay leaf 680 g rosehip preserves 1 dl stock
Recipe preparation step
1 **Keating: ** 2 – clean and cut the meat into pieces of about 200 g, salt and white pepper 3 – add the crushed (ground) juniper to the red wine and add the prepared meat to the marinade 4 – leave the meat in the marinade for a min.
