Waldorf’s salad is certainly one of the most popular recipes in the world. It’s a dish made by a Waldorf hotel.
Ingredients for eight
1 medium celeriac* 2 apples 1 tablespoon of lemon juice 2 handfuls of sauerkraut 1 tbsp.auml;hkinöitä**
3 dl mayonnaise (or lighter)1 tablespoon of lemon juice 1 teaspoon of fennel seeds
* For a more summery version of Waldorf salad, use celery instead of celeriac.
* The original Waldorf salad was made with sauerkraut caramelized in the oven and topped with protein, sugar and spices (fennel, coriander and cayenne pepper).
Peel and cut the celery into julienne sticks. Tämä best done with mandoline – hätäcase with a grater. The same treatment for the apple. Put them both in a bowl and juice the lemon so they don’t start to darken.
Mix the salad dressing with mayonnaise, lemon and fennel seeds.
Mix the vegetables and dressing. Place in the fridge for a couple of hours. Finish the Waldorf salad with a scallion salad.
