Zucchini risotto: Quick, easy, delicate

When you are in the mood for something light without meat and you don’t have much time. Tasty vegetable risotto will be ready in 30 minutes.

Heat the stock (broth) in a pot and let it bubble lightly.

In a saucepan, heat the oil, add the chopped onion, lightly salt it and let it sauté until glassy. Then add the garlic to the onions and sauté for a minute or so.

Add the rice to the pan, stir it for a minute and finally pour a gill of boiling stock over it.
TIP: at this point, before adding the stock, you can splash a drop of white wine over the rice.

Stir, let it bubble over low heat, and when the rice has absorbed the broth, add more stock and continue like this for about 20 minutes until the grains of rice are soft on the outside but al dente on the inside (firmer to bite).
TIP: you probably already know this (just a reminder) – the myth that risotto needs to be stirred constantly has never been true. Simply work over a medium flame and don’t forget to add the stock. Then stirring occasionally is really enough – for example, when you add the broth.

Wash the courgette, wipe it dry, cut it (including the skin) into small cubes which you put into a bowl, salt and mix. Let it stand for 5 minutes, drain the juice released by the zucchini and lightly fry the pieces of Vegetable Recipes in a drop of oil – about 5 minutes.

Add the roasted zucchini to the risotto just before the end of the boil, set the risotto aside, stir in the butter, grated Parmesan cheese, chopped parsley and season with salt or freshly cracked black pepper as needed.
TIP: The risotto should have a mushy consistency, so that when it is layered on the plate, it will slowly spread to the sides of the plate.

Divide the risotto between two plates and serve with a glass or two of good white wine.
