Zucchini Potato Pancakes

Pancakes, potato pancakes or lokše. There are many names for potato fritters, as well as recipes. This one is special in that the base is mashed potatoes. So if you have leftovers from the day before, use them in a new dish.

Ingredients:

Rule for 2 servings: 300 g sugar 200 g ./td> mashed potatoes 2 pcs garlic cloves 2 pcs medium eggs 1 tbsp of plain flour olive oil

Procedure:

Grind the zucchini on a coarse grater and salt it quite a lot (to the point of over-salting), let the zucchini “sweat” like this for at least half an hour.

Salt the courgette to release excess water, then drain and squeeze the courgette almost dry.

Add the crushed garlic, egg, flour and mashed potatoes.

Thoroughly mix everything into a thin batter.

Finally, fry the batter in a little oil in the shape of small pancakes.
