Zucchini Eintopf

Vegetable eintopf of zucchini, carrots, onions, beef broth and spices, with a smoked meat insert.
Ingredients:
Procedure:
1. Clean the zucchini, peel and remove the seeds, then cut into cubes, as well as the smoked, chop the onion finely, meanwhile just peel the carrots
2. In a saucepan, fry the onion in oil, add the smoked meat and fry for about 5 minutes, then add the zucchini and coarsely grate the carrots
3. Pour in the beef broth and cook for 30 minutes on a low heat source, of course under a lid
4. Finally, season the soup with salt and pepper, and garnish individual portions with chopped herbs when serving.
Recommendation:
Can be served with bread.
