Wine Sausage with Pea Porridge

Wine sausage rolls fried in lard, served with pea porridge garnished with fried onions.
Ingredients:
Procedure:
1. Soak the peas and cook them according to the instructions (usually rinse and soak the peas for a few hours, then drain the water, pour in clean water and cook the peas under a lid until tender, remembering to salt them just before the end of cooking)
2. When the peas are soft, drain off the water, add the onions, season with salt, pepper, marjoram, garlic and mix
4. Roll the sausage (individual portions of 250 grams) diagonally with two skewers, roll in plain flour and fry slowly in lard
