From 5 egg whites “whip” the cream, sift the flour and sugar. Stir in the sugar first, then the flour and finally the nuts.

Pour into a greased tin and place in a well heated oven at 180 degrees for at least 3/4 hours. The top may rise a little as it bakes. After baking, wrap the nuts still hot with the mould in foil and leave to stand until the next time to moisten and cut nicely.

After standing, slice with a sharp knife into thin slices. Spread them on a baking sheet and let them dry in the oven at 150 degrees on the warm setting. The biscuits will harden and turn pink.
