Vision gliko – Greek jelly

This jelly is created during the production of the traditional Greek drink Vissinada. If it is not used to make syrup, it is served as a dessert or used in the same way as the classic preserves, to flavour desserts, etc.

Ingredients:

1 kg of sanding sugar 1 kg ripe sour cherries 1 tsp lemon juice 300 ml of water Other: large saucepan, skimmer and jam jars

Procedure:

1. Put some of the pitted cherries in the pot, sprinkle sugar over them, then put another layer of cherries, sugar again … repeat the process until all the cherries are used up, let stand for 3 hours
2. Pour 300 ml of drinking water into the pot, bring everything to a boil, while collecting the foam that forms on the surface, stir and let it bubble on a low heat source until the syrup thickens

Recommendation:

Visinade is obtained by diluting this jelly with water in a ratio of 5:1. Serve with ice!
