Vegetable soup with semolina gnocchi

1 tbsp butter 1 pk carrots 1 pk parsley 1/2 pk kohlrabi 1 pk medium onion 1 clove garlic 200 g Brussels sprouts 1/2 packet frozen Vegetable Recipes (mixture – cauliflower, broccoli, carrots) 1 pk vegetable broth salt, black pepper parsley
Grits Gnocchi
3 tbsp baby semolina (fine) 1 tsp butter 1 pk egg a little baking powder

A delicious, colorful soup.

Place 1 tbsp butter in a saucepan with the carrots, parsley and kohlrabi, which have been coarsely grated on a grater

Fry everything together in the butter for a while, pour about 2 dcl of water and simmer for a while. The grated Vegetable Recipes thicken the soup a bit and we like it that way 🙂

Add water to the pot, add onion, garlic, cleaned brussels sprouts and frozen Vegetable Recipes. I like to use fresh veggies best, but I always have “SOS frozen” in my freezer

Add salt, pepper, broth, parsley and cook until soft.

Add semolina gnocchi before finishing. Mix all the ingredients for the gnocchi together, let stand for about 5 min and then scoop with a small spoon and carefully drop into the soup.
