Vegetable planter

Considered as a side dish in some regions, we think that the vegetable garden is a complete dish, with full of vitamins and proteins. The recipe is quite simple, inexpensive and takes no more than an hour from preparation to cooking. Very compatible with the Weight Watchers diet.
Ingredients: 4 parts
7 SP – Green / 7 SP – Blue / 5 SP – Purple 1 onion 4 small potatoes 4 carrots 200 g green beans 200 g peas 150 g plain bacon 2 cloves of garlic 1 tablespoon tomato paste 1 vegetable stock cube 2 teaspoons olive oil 15 g light butter salt and pepper
Preparation:
Wash the potatoes well, then cut them into 4, and the carrots into slices.
Fry the minced onion as well as the garlic cloves with the lardons in a casserole dish, with the oil, then add the potatoes, carrots, green beans and let it fry for 5 minutes.
Salt and pepper, then cover with half of water, then add the tomato paste, broth and butter.
Close the casserole and let it cook for about 20 minutes, then add the peas and let it cook for another 10 minutes without a lid.
You can serve your vegetable jardinière on the spot or leave it until the next day before eating it.
