8 servings 350 g courgettes salt for seasoning 1 tbsp olive oil 3 pcs. medium eggs 5 sprigs of parsley 75 ml skimmed milk ground pepper for seasoning 3 sprigs of thyme 1 bunch of onions 150 g peas nutmeg for seasoning 200 g spinach leaves
Step of the preparation
1 Rinse and drain the peas and spinach. Slice the rinsed courgette, finely chop the cleaned onion, chop the parsley leaves and thyme.

2 Preheat the oven to 180 °C. 3 Whisk the eggs with the milk, season with salt and pepper and sprinkle with a little grated nutmeg. Heat the oil in a wide, heavy-bottomed frying pan and fry the Vegetable Recipes. Season with salt and pepper, transfer to a baking tray, cover with eggs and bake for about 25 minutes.
