Vegetable couscous with tofu cheese

1 cup couscous 2 cups boiling water 3 tbsp olive oil 1 pk colored peppers 2 pk mushrooms 1 pk carrots 2 pk tomato 360 g white tofu 1 tbsp parsley to taste salt, ground black pepper
procedure
1. Pour hot water over the couscous, season with salt, cover and leave to stand. 2. Cut the Vegetable Recipes into small pieces, drizzle them with oil, place them in a baking dish, season with salt and pepper and place them in a preheated oven at 200°C for 20 minutes. Cut the tofu into cubes, season with salt and fry in hot oil. 3. Remove the Vegetable Recipes from the oven, mix them with the couscous, tofu, add the fresh tomatoes and chopped parsley.
