Vegetable beef soup recipe

This is a delicious and hearty soup that is perfect for a winter meal. It is packed with vegetables and beef, and has a rich and flavorful broth. This soup is easy to make and can be made in advance. It can be served with crusty bread or biscuits.
To make this soup, you will need:
1 lb beef stew meat, cut into small cubes
2 carrots, diced
2 celery stalks, diced
1 onion, diced
3 cloves garlic, minced
1 tbsp olive oil
6 cups beef broth
1 can (15 oz) diced tomatoes, undrained
1 can (15 oz) corn, drained
1 can (15 oz) green beans, drained
1/2 tsp dried thyme
1/4 tsp black pepper
salt to taste

Directions:
In a large pot or Dutch oven, heat the olive oil over medium high heat. Add the beef cubes and cook until browned on all sides.
Add the carrots, celery, onion, and garlic to the pot. Cook for 5 minutes, stirring occasionally.
Add the beef broth, diced tomatoes, corn, green beans, thyme, and pepper. Bring to a boil. >
