Vegan meat recipe with roast veggies
A vegan meat recipe with roast veggies is the perfect way to enjoy a hearty, yet healthy, meal. This dish is packed with protein and fiber, and is also gluten-free. The best part about this recipe is that it’s so versatile – you can use any type of vegetables you like, and even switch up the protein source. I used lentils in this recipe, but feel free to use beans, tofu, or tempeh.
To make this recipe, simply:
Preheat the oven to 375 degrees Fahrenheit.
In a large pot, cook the lentils (or other protein source) according to package instructions.
While the lentils are cooking, chop up the vegetables into bite-sized pieces. I used carrots, potatoes, and Brussels sprouts, but you can use any vegetables you like.
Once the lentils are cooked, mix them together with the vegetables in a large baking dish.
Bake in the oven for 25-30 minutes, or until the vegetables are cooked to your liking.
This recipe is great as is, but you can also add additional seasonings to taste. I like to add a bit of rosemary or thyme for extra flavor. You could also add a few tablespoons of BBQ sauce, hot sauce, or salsa to give it a zesty twist. Serve this dish with a side of brown rice or quinoa for a complete meal
