Holubtse (Holubtsy, Golubtsy) is a celebration of Ukrainian food. It is steamed cabbage leaves filled with a mixture of several meats, spices and cooked rice, steamed until tender, served with a spoonful of sour cream, topped with rendered bacon. Recipe from the show “VIP Prostřeno” by Mrs. Halina Pawlowska.

Procedure:
1. Cook the rice in lightly salted water until semi-soft
2. Stew the meat cut into small cubes with the garlic cloves sliced into slices in a tablespoon of coarsely chopped onion in a tablespoon of well heated oil and a tablespoon of butter, season the mixture with salt, paprika and pepper
3. Mix the rice with the stewed meat, taste to see if it needs seasoning, it doesn’t hurt to add more pepper and mace
5. Wrap the mixture carefully in the leaves so they don’t curl up, twist the leaves at the ends like envelopes, put them in a pot with a little water and steam for about 1 hour
6. Fry the diced English bacon, pour over the rolls and garnish each portion with a spoonful of sour cream when serving.
