Tomato risotto with roasted peanuts

4 pcs carrots 1 pcs onions 4 pcs tomatoes 2 pcs tomatoes 2 handfuls peanuts 2 cloves garlic 1 tbsp oil 200 ml passé tomatoes 1 handful parsley pcs salt pcs ground black pepper 1 cup rice 2,5 cups water
procedure
1. Fry the onion and peanuts in the oil. 2. Add carrots, tomatoes and rice. Fry for 2 more minutes and cover with water. (2,5 cups of water for 1 cup of rice). 3. When all the water has evaporated, salt and pepper the risotto to taste and add the chopped parsley. 4. Enjoy!
