Tomato and beetroot soup with fragrant thyme

1 kg vine tomatoes 1/2 kg beetroot 100 g cooked red beans 2 pcs shallots 2 pcs bay leaves 2 cloves garlic 1 tbsp fresh thyme leaves 1 tbsp coconut sugar pcs sea salt pcs black pepper pcs coconut fat

I already get vine tomatoes at the market. You know, the huge, meaty, juicy, flavorful ones. They literally ask to be chopped up for soups, sauces. Tomatoes. They come from paradise. They are one of my favorite fruiting Vegetable Recipes. I got a young beetroot from a friend. I used some of it in an omelet and a salad. Oh, and cooked some of it with the divine tomato to make this delicious and flavorful soup. Nutritionally speaking, it’s packed with antioxidants. The tomato’s rich vitamin composition of A, B, C and E disappears when we cook it, but it still remains full of magnesium, calcium, potassium.
Beetroot is detoxifying. Be careful about eating beetroot if you have kidney problems. With potassium, it has a diuretic effect on the body. This soup is excellent when you want to cleanse your body.

Remove the “stems” from the tomatoes, and cut them into small cubes with the skin. Do not peel the beetroot, if it is firm and young, the peel will add fibre to the soup. If you have older beetroot, you should of course peel it for better flavour.

Grate the beetroot on a carrot grater. Chop the shallots into smaller pieces and sauté them in coconut fat along with the garlic and bay leaf. Add the tomatoes, some of the thyme. Once the tomatoes are cooked, blend them ( pull the bay leaf out of the soup before blending)

Return the coarsely blended mixture to the pot, add the beetroot and cooked beans. Add salt, pepper. Cover with water so that the soup is thick. Just reheat.

Beetroot should remain “al dente”, reheat so that all ingredients are at the same temperature. Sprinkle the thyme leaves in the plates still.

TIP: this soup is adored even by our children. But they have to get it blended. Explain to them beforehand what beetroot does so they don’t fly out of the toilet scared that they are sick.:)
