Tiramisu

Tiramisu is a classic Italian dish that, as its name suggests, is the last course of a long dinner.
Ingredients for six
250 g mascarpone cheese 2 eggs approx. 1dl sugar 100 g savoiard biscuits; a good cup of strong coffee (2-3 tbsp almond milk) sugar-free cocoa powder
First of all, make sure that the bowl and whisk are dry and clean. Separate the whites and yolks from the eggs into separate bowls. Be careful not to mix the yolks with the whites.
Beat the whites to a stiff froth. If the whites do not take to whipping, preferably take the new whites into a clean bowl and try again. In another bowl, whisk the egg yolks and sugar until thick and pale.
Add the mascarpone to the egg yolks and mix until smooth. Add the whipping cream to the mixture, beating gently.
If you are making a liqueur, add it to the coffee. Dip each savoiard biscuit in the coffee and place in the bottom of a serving dish. Top the biscuit layer with a layer of mascarpone whipped cream and again with a layer of biscuits dipped in the coffee, then top with whipped cream.
Let the tiramisu sit in the fridge for at least a couple of hours before serving. Just before serving, sprinkle a layer of cocoa powder on the surface of the sieve.
Crunchier tiramisu?
To give the tiramisu a more crunchy feel, before serving, crumble a layer of biscuit to make a crumb, and then add the cocoa powder topping.
