Add the wrung out gelatin then set 4 min at 90° on speed 5.
Pour this second layer into the verrines then place them in the refrigerator for 30 min.
White chocolate cream:
Put 6 sheets of gelatin in cold water for 10 min.
In the clean bowl put the white chocolate, 250 ml of cream, 250 ml of milk, 20 g of sugar then set 4 min at 90° at speed 5.
Add the wrung out gelatin then set 4 min at 90° at speed 5.
Divide into the verrines then place in the refrigerator for 1 hour.
