A classic that tastes good every time☺️ Fantastic, easy cookie full of juicy fruit combined with a crunchy dough

In one bowl, first mix flour, sugar, salt and baking powder with a spoon. Then add 2 whole eggs and soft butter. Make a soft, oily, semi-soft dough. Let the dough stand for 20 minutes.

Then peel enough apples to give a net weight of 1.5 kg. Coarsely grate half and cut the other half into small cubes/pieces. Next, we need vanilla custard to thicken the juices the apples let out during baking. You can add sugar and cinnamon to taste, I put as we like it 🙂 As for the filling, stir it in just before filling, otherwise it will unnecessarily let too much juice from the sugar into the dish. Put the apples aside for now and stir them in just before filling.

On a lightly floured board, divide the dough into 2 parts, let one be slightly larger. Roll out the larger part to a slightly larger size than the tin. This is because the bottom dough needs to have the edges up. My baking tray has an internal dimension of 25 x 35 cm. Transfer the dough with a rolling pin to a baking tray with baking paper, adjust the edges and prick the dough with a fork.

Spread the filling evenly over the dough and cover with the other dough, which you have rolled out to the size of the baking sheet. Brush the top with beaten egg and prick with a fork.Finally, put it in the oven, which we have already preheated to 180 °C for about 35-40 minutes You need to keep track of it, because every oven bakes a little differently.

The pie is crispy and amazingly juicy!!! But it’s at its best a few hours later, or the next day when it has become stale

If you would make the Pité in a bigger baking tray, but still want to have visibly more filling, I recommend to put 1/2kg more apples Have a good taste !
