Thai Rio Mare Tuna Sandwich with Asian Cucumber Salad

The winner of the 7th year of the national gastronomic competition Snack of the Year with Rio Mare was Natálie Svobodová from the Hotel School and Business Academy Havířov. The future chefs had to prepare a modern and healthy snack. Here is the recipe with which Natálie won. She prepared a mouth-watering tuna sandwich with Asian cucumber salad. Ingredients:

Ingredients for 4 servings: 4 pieces of small canned Rio Mare tuna Leggero 6 tbsp mayonnaise 2 tbsp fish sauce 1 tablespoon chopped spring onions and carrots 1 teaspoon chopped ginger 1 teaspoon chopped cilantro 1 handful sliced red cabbage, 1 pk small chili peppers 1 pc garlic clove 1/3 pc salad cucumber roasted unsalted peanuts a little wasabi paste sesame oil rice vinegar

Procedure:

Rio Mare Tuna Leggero tossed together with finely chopped spring onions, ginger, fresh cilantro and julienne of carrots.

Add the sesame oil and combine everything with the mayonnaise.

Gently fry the pressed garlic in the sesame oil, add the finely chopped chilli pepper, spring onion along with the rice vinegar and fish sauce. Marinate thinly sliced cucumber in this dressing.

Mix the mayonnaise with the wasabi paste and spread it on slices of toasted bread, add thinly sliced red cabbage and spread with Rio Mare tuna mixture.

Trim the edges, cut in half and serve alongside the Asian cucumber salad.

Recommendation:

Julienne is a vegetable cut into very fine strips, sometimes steamed or sautéed in butter.
