Wash the eggplants and cut them into slices about half a centimeter thick.
Layer a large baking sheet with paper and preheat the static oven to 180°.
Put some washed and dried basil leaves, grated parmesan, breadcrumbs, chilli and pepper into a blender, then blend for a few seconds.
With a brush, oil the baking paper and sprinkle lightly with salt, then arrange the eggplant slices on it, one next to the other.
Baste each slice with oil and cover with an even layer of breadcrumbs.
Drizzle with oil and then place in the lower part of the oven.
Bake for about 20 minutes at 180° until the eggplants are golden brown.
Put some chopped fresh parsley on the surface to garnish.
