Batatas or sweet potatoes are relatively unknown in our country. They can be prepared both savoury and sweet. They are very healthy, have a low glycaemic index, lower blood pressure, thanks to natural sugars they are ideal for weight reduction, they are a source of energy thanks to their fibre and carbohydrate content, they have a positive effect on eyesight, they strengthen immunity, they are a source of several important antioxidants, vitamin C, E, beta-carotene.

Wash the sweet potato, prick with a fork in several places, sprinkle with salt, add herbs – thyme, parsley, etc.

Spray with oil and bake at about 200°C for about 45-50 minutes. The sweet potato needs to be completely soft, it needs to be pricked. The baked sweet potato can be cut lengthwise and baked for 10 minutes more.

Stewed mushrooms: fry onion in oil, add garlic and sliced mushrooms, fry for a while, then sauté for a while, add salt, pepper and parsley at the end.

Serve the baked sweet potato with the sauteed mushrooms.
