Stuffed onion recipe

These tender onions are stuffed with a mixture of sausage, panko and pine nuts and grilled to perfection. A great meal on its own or a great accompaniment to any grilled meat.
What you’ll need
6 large sweet onions 1 cup/240 ml panko breadcrumbs 1/3 cup/80 ml chicken broth 1/4 pound/60 ml ground sausage, cooked 1/3 cup toasted pine nuts 2 teaspoons/10 ml tomato paste 2 tablespoons/30 ml finely chopped parsley vegetable oil 1/4 cup grated Parmesan cheese
How to make it
1.Create a skin in the onions. Cut out the flat-bottomed root. Cut off the top and save. Cut out the onion, leaving about 3 layers on the outside.
2. Combine cooked sausage with chicken broth, panko bread roll, pine nuts, tomato paste and parsley. Stir equal amounts into each onion (more onion may be added). Place the onion back in the onion cases and wrap in aluminum foil. Don’t pack them too tightly or the steam may burst the packaging.
Preheat the grill to medium heat.
4. Place the onions on the grill and cook for about 1 hour or until very tender. Once cooked, remove from the grill and let the foil packet sit for about 10 minutes before opening.
5. Using heat-resistant gloves, carefully open foil packets. Remove the outer skin. Serve with onions stuffed with Parmesan cheese.
