Stuffed baked bread

A good breakfast or a great dinner. This recipe lends itself to both. The advantage is that you can prepare it quickly and use everything you have in the fridge.

First, prepare everything you want to use. Whisk the eggs, add the chopped parsley, salt and pepper. Cut the onion into rounds, the tomatoes too. Prepare the ham and cheese. The cheese can also be grated.

1.) Pour the eggs into a large enough frying pan coated with oil and immediately place the bread a little further apart in the centre. 2.) When the omelette is firm, turn it over so that the bread is toasted on the other side. 3.) As soon as the omelette is turned over, place ham, cheese, chopped spring onions, sliced tomato or whatever else you have and like on one piece of bread. 4.) Fold the omelet over the bread, fold the right side over the left side. Cut in the middle and lay one bread over the other.

This leaves the omelet and all the filling inside, covered on the top and bottom with the baked bread.

Using older bread and leftovers from the fridge, you can make a delicious breakfast without wasting food.
