Strawberry syrup

2 kg fresh strawberries 1.5 kg sugar 1 tbsp citric acid 2 dl water

Preserve the aroma and taste of summer strawberries in homemade syrup.

Quarter large strawberries and let them simmer.

Let the pulp cool a bit. Then strain the strawberries through a sieve, on which we can put gauze when it is thinner. Do not squeeze. Just let the strawberries run off on their own.

Set the drained strawberries aside in a bowl.

Place the strawberry juice in a clean saucepan, add 1.5 kg of sugar and one tablespoon scoop of citric acid. Let the sugar dissolve. Let the juice go through the boil. Pour the hot syrup into the bottles and close the lids when hot. Then wrap them in a blanket where they will stay until they cool down.

The strawberries can be used for jam or in a cake.
