An old Bohemian recipe from southern Bohemia, psohlavci – Chodů, which is considered a regional specialty in the area around Domažlice. It has several variations, somewhere the potatoes are sliced, elsewhere they are grated, the smoked meat is replaced by salami, this recipe is the closest to the original recipe.
Ingredients:
Procedure:
1. Boil the potatoes in their skins, peel and slice them when cooled, soak the dried mushrooms in a mixture of milk semolina and egg
2. Smoked meat, crackling and onion cut into small pieces and fry in lard seasoned with garlic, cumin, marjoram, pepper and salt
3. Bake the dish in an oven preheated to 200 °C for about 15 minutes, before the end pour the mixture of mushrooms with milk, egg and semolina over the surface, slowly finish baking.
Recommendation:
Serve the steak dish warm, serve sauerkraut as a side dish.
