Simple lunch without meat
1.
Place the frozen spinach in a pan and give it a little water. Defrost and simmer from 5minutes. Season with salt, add a clove of garlic towards the end.

I moved some of the garlic to the soup. I only kept a portion for the pan. I added a serving of rice. You can easily use the leftover rice from the day before.
3.
Add two eggs, stir like scrambled eggs until thickened.

Serve with grated cheese.
