A quick, healthy and tasty seasonal dish to have on the table in minutes This is my favorite breakfast this spinach season. Maybe this simple inspiration will work for you This dish is also great for lunch or dinner.

In a frying pan, fry some finely chopped onion in oil along with some finely chopped bell peppers. Then add the spinach, add a little salt and let it reduce in volume, stirring occasionally. I don’t smother it completely until soft, just do it, it will leave more vitamins in it Finally, whisk the eggs with a little salt and pour them on the spinach and bake for a while
