Spinach pancakes with Jerusalem artichoke flour

Lewis is a delicious dish. We really like them for their variation in sweet and savoury. I also make flourless, gluten-free, egg-free. Colorful with blended Vegetable Recipes, fruity with homemade ice cream.
I always make my kids grateful with funnel cakes. Similar to pancakes, but pancakes are easier to make. If you want to color this delicacy, you can mix spinach, chard for example instead of water – you will get green color. For yellow, use turmeric. For orange, use sweet potato or hokkaido, for red, use cabbage mixed with carrots (they turn red better), or beetroot, blueberry, chokeberry… If you’d like to make the funnel cakes brown, you can also use coffee or carob instead of the traditional cocoa. Or black with sepia ink. Fortunately, no one has asked for a smurfette yet. I’ve never really liked blue food. Only borage blossoms, which I got from a friend today and used in a salad. I’ve written about borage before, its use in the kitchen has side effects besides its great taste – it’s actually medicinal.
This dish isn’t that quick, because making 40 funnel cakes for the whole family with i requires a bit of patience and time as well. That’s why I used Vegetable Recipes as a side dish with the pancakes, which were ready in a few minutes. I also used mini patisons to prepare the meal. Mix all the ingredients together to make a smooth and thick batter. When using blended Vegetable Recipes, use this smoothie liquid carefully so that it doesn’t dilute your mixture unnecessarily. Once you have a smooth batter, let it sit for a few minutes. Then stir, it wont thicken any more, after all – glutinous spelt flour works with liquid.

Melt a minimal amount of coconut fat in a hot frying pan. I use an ice cream scoop as a measuring cup for the pancake batter. The funnel cakes are almost the same size and not too big.

TIP: you can also combine the savoury pancakes with a cheesecake filling with chives, or a spread.
