Spinach Florentine

Spinach baked with rice, ham, cheese and eggs.

Procedure:
1. Put the parboiled, rinsed and steamed rice into boiling salted water
2. Boil the rice until tender, drain and let it drain
3. Put the cleaned spinach leaves in a small amount of boiling water, add salt and simmer until tender
4. Then drain the leaves and after draining chop finely and mix with a piece of butter, one hard-boiled and finely chopped egg
5. Mix the soft rice with grated cheese, diced ham and alternately with the spinach and arrange in layers in a greased and breadcrumb-lined baking dish
7. Bake the dish briefly (190 °C), then dig 4 pits in the surface, beat the egg whites into them 8.
Recommendation:
This dish can also be made with frozen spinach – cut the spinach into chunks with heated feet and heat in a saucepan until most of the water has evaporated.
