Spinach and nettle gnocchi with bryndza and cottage cheese

400 g frozen spinach 2 handfuls nettle leaves 400 g spelt plain flour 2 pcs egg 250 g bryndza 180 g cottage cheese

Clean the nettles thoroughly. Leave it to soak in lukewarm water for at least a quarter of an hour, then rinse several times with a stream of cold water and boil for about 10 min. In this way we can remove the tougher stems without scorching.

Cut it into small pieces and add to the spinach. Add the eggs, flour, salt and, if necessary, a little water to thin the batter.

In a saucepan, bring salted water to a boil. Using a gnocchi strainer, drop the gnocchi into the boiling water and cook for about 5 min. Using a sieve, remove them to a clean bowl. Add the bryndza, cheese and mix. Serve with cottage cheese.
