Spiced udon noodles

Udon noodles absorb flavours and thicken incredibly when cooked. With seasoning and spices, you can really get imaginative.
Ingredients for four
200g udon noodles dry (available from Asian shops), vegetables to taste (carrots, onions, leeks, mushrooms, etc.).)
Sauce
2 tablespoons soy 4 tablespoons dashi sauce 2 tablespoons ponzu sauce 1 tablespoon brown sugar
Cook the udon noodles with the chopped vegetables until crispy and pour off the excess water. Stir gently to prevent the noodles from sticking.
While the noodles are boiling, stir in the sauce ingredients to wait.
Stir in the sauce and the udon noodles (and mix until slightly thicker to serve). Allow to season for a while under the lid and serve immediately.
