Speck with broccoli sauce recipe

2 servings 200 g of broccoli 1 onion with slo- slice 40 g of English bacon approx. 60 g Niva cheese or other stronger cheese, approx. 400 g Speck – semi-finished or home-made, approx. Add the bacon, cut into noodles or cubes, and fry it in the onions. Throw in the chopped broccoli florets, which are lightly covered with cream and simmered under a lid until soft – to taste. Do not cover too much, just enough so that the grated cheese, which we then put in the lid and allow to melt, thickens the sauce sufficiently. Pour the sauce over the sprats on the plate or mix it with the sauce and garnish the plate with a little grated cheese. 2 If we wish, we can use a ready-made semi-prepared dough, where we just slightly boil the prepared specli according to our water, or we can make a homemade one, where we make a thicker dough from the ingredients listed: 300 semi-coarse flour, 3 eggs, salt, a pinch of nutmeg and about 160-180 ml of water, which we leave to stand for about 5 minutes and then, either through a gnocchi strainer or by cutting the dough off the board, we drop it into the boiling salted water, when the specle is cooked, drain and serve.
