Speck Dumplings

Who doesn’t know “fatties”! A food loved, hated, or maybe just neglected. It offers a great solution to make the most of yesterday’s rolls. Although the name of the dish probably makes you think you shouldn’t indulge in it while dieting, don’t be fooled. The dumplings can be made with leaner bacon, and they’re also a great complement to sweet and sour cabbage, full of fibre, ‘c’, ‘cats’, antioxidants and also folic acid.

Ingredients:

10 pcs of day old rolls 3 pcs eggs 350 g bacon 120 g coarse flour 1 handful of young nettles (or parsley) 350 ml milk freshly ground pepper nutmeg sunflower oil salt To serve: fried onions to serve pickled red cabbage to serve

Procedure:

  • Cut the bread and bacon into cubes.
  • Place in a bowl, add milk, beaten eggs and season with nutmeg, salt
    and pepper.
  • Add the chopped nettles to the mixture and sprinkle with flour.
  • Wet hands shape the dumplings and cook in salted boiling water for about 25 minutes.
  • Pierce the cooked dumplings with a fork and serve with cabbage and fried onions.
  • Recommendation:

    You can recognize fresh bacon not only by its smell but also by its colour. It should be bright pink in colour and have white or yellowish fat.
