Spätzels

A garnish of plain flour, eggs and milk.

Ingredients:

400 g smooth flour 120 ml milk 4 pcs egg water salt

Procedure:

1. Mix the flour with the eggs, milk and a pinch of salt to make a smooth batter
2. Bring sufficient salted water to the boil
3. Rinse a cutting board with cold water, put a small piece of dough on it and spread it with a wide knife
4. Scrape longer pieces of dough into the boiling water until all the dough is used up
5. Once the spaetzle floats to the surface, let it go through the boiling process, then pull it out, drain and let it drain

Recommendation:

If you don’t want to serve the spaetzle immediately after cooking, rinse them with cold water and refrigerate them, then reheat them in a pan with melted butter just before serving.
