South Bohemian Mushroom Kuba
Last Updated on
An old Bohemian Christmas dish in which you must not miss the tubular stroček. This mushroom colours the dish black.
Ingredients:
Procedure:
1. Rinse the groats and cook them in slightly salted water with cumin until soft
2. Drain the cooked beetroot, rinse again and leave to drain
3. Fry the onion in lard, add the pre-soaked grits and simmer until tender
4. Grease a baking tray with lard, mix the grits with the simmered grits, season with garlic, marjoram and salt, sprinkle the surface with melted lard and put in the oven for 20 minutes
5.
Recommendation:
If we do not have dried mushrooms, we use a mixture of dried mushrooms, but the dish can also be prepared from fresh mushrooms. For more information about the tubular mushroom, see our mushroom atlas here: The tubular pod.
Note:
The tubular pod is dried and used in Christmas cubes or soups, or prepared as a mock foie gras. It has many folk names: chimney sweep, slipper, drones, trumpets. Text and photo: D. Marounek
