Sourdough pancakes with marmalade and curd mousse

Pancakes
300 g semi-coarse flour 200 g plain flour 100 g coarse flour 15 g yeast 30 g granulated sugar 2 pcs egg yolk 1/2 liter milk 150 g raspberry or strawberry jam
Cottage cheese mousse
1 pk vanilla sugar 250 g soft cottage cheese 100 g crystal sugar 2 dl cream

Mix the flours.

Add the yeast, sugar, egg yolks and pour in the lukewarm milk.

Mix the dough and let it rise for 30 minutes.

From the risen dough, bake the pancakes.
5.
Make the mousse – mix the cottage cheese with the sugar and vanilla sugar. Add the cream and beat well.
6.
Spread the cottage cheese mousse and marmalade on the finished pancakes. Enjoy!
