Sour mushroom soup
Last Updated on
ingredients
6 pcs fresh mushrooms preferably porcini mushrooms 3 tbsp butter 1 tbsp plain flour 2 cloves garlic 2 pcs potatoes 4 dl stock 1 pcs vegetable broth ground black pepper salt
procedure
1. Wash the mushrooms and cut them into small pieces. Melt half the butter in a pan and saute the mushrooms. 2. In a saucepan, make the roux. Melt the remaining butter, when it starts to brown, add the flour and stir. 3. Add the stewed mushrooms, vegetable stock and let it cook. Meanwhile, cut the potatoes into cubes and add them to the soup. Season the soup with salt, black pepper and finely chopped garlic. 4. At the end of cooking, add stock to the soup – the amount depends on how sour you like it. I put about 3-4 decimals. Let it simmer for a few minutes and the soup is ready.
