Sour cherry-cheesecake

400 g plain flour 100 g semi-coarse flour 100 g granulated sugar 2 dl milk 1/2 dl white yoghurt 1/2 dl vegetable oil 50 g butter 1 pk egg white 21 g fresh yeast 1 KL salt
Filling:
700 ml cherry compote 500 g soft cream cheese 1 tbsp lemon juice 1 tbsp vanilla custard powder 1 packet vanilla sugar granulated sugar to taste
To spread:
1 pk yolk 1 tbsp vegetable oil

One way to make use of the compote from the pantry 🙂 Few can resist the combination of curd and fruit in sourdough 🙂

In one bowl, first mix both flours, sugar and salt with a spoon. Then add the oil, the already half-run butter, the yoghurt, the egg white and the swollen sourdough starter. We prepared this from 2dl of milk + 1 kl of sugar. Knead the dough well. Work out a soft, plump, greasy, from semi-soft to softer dough that separates from the bowl. Using a little flour, knead it briefly to form a loaf. Dust the top with flour and leave in a warmer place to rise for about 45 minutes to double in volume.

Let the cherries drain and then stone them.You can use another suitable compote instead of cherries according to taste 🙂

Just before filling, mix the cottage cheese, both sugars, lemon juice and 1 heaped tablespoon of vanilla powder. Everyone can add sugar according to taste.I put 5pl. Finally add the compote and mix.

Roll out the risen dough into a large rectangle. Cut it into 8 equal parts and make 2 notches in each.

Distribute the curd evenly on each dough equally and then use the other side of the dough to seal the filling properly. Using your fingers, push the edges all around 🙂 Finally, just place on a baking tray with paper and brush them with egg yolk, which we have mixed with 1pl of oil.

Bake the cakes without rising at 190°C for about 25-30 minutes. Depends on the oven.

After baking, you can brush the hot cakes with a piece of butter, they will be even more tender 🙂

Sugar the cakes with powdered sugar to taste.

The dough is light and tender, the filling is really very good and the cake is really rich 🙂
