Sour Beef Roast
Loaded beef hind, baked in the oven until golden brown, served with juices from the fat.

Procedure:
1. Mix the red wine, wine vinegar, sliced carrots and onions, mustard, spices and salt, add the meat and let it sit in this mixture overnight, turning the meat twice
2. The next day, drain the meat, put it in the hot fat, pour some of the marinade with the ingredients and simmer it under the lid in a moderately heated oven until tender, turning the meat while stewing, pouring the juices and basting with the marinade
3. Remove the soft meat and cut into slices
