Soup of white roots, peas and hemp

1 pk kohlrabi 1/4 pk kale 1 pk parsley 1 pk parsnip a little celery 1 pk small zucchini 200 g peas 200 g hemp peeled seeds 1 pk shallots 2 cloves garlic a little parsley 2 tbsp coconut oil 1 tsp ground cumin

I always try very hard to get as many Vegetable Recipes and fruits into our children as possible. We play with fruit in smoothies and desserts, Vegetable Recipes go down our throats a little harder. I mean us, more like the kids J Our older one likes kohlrabi, peppers and baby spinach, peas and carrots, cabbage..the rest she’ll only eat in blended form. As she told me herself, I can mix anything in there for her, just don’t let her see it J But she always asks what’s on her plate, so she used to eat a lot of lentils, chickpeas and any of my choice. All the soups whose recipes I have posted are eaten by the kids too J that is, the ones that are in a creamy state. And she ate mushroom soup this way too, although she can’t even smell the mushroom. Blending is a way to give kids a fresh and nutritious meal, they will enjoy themselves and progressively get used to the Vegetable Recipes themselves even in a different state.
Additionally, this soup is also a bit “raw” because the peas and green kale leaves are blended in at the end, so they have not lost their vitamin value by cooking. Always cut out the kale heads, they could become rancid by blending and boiling.

Clean and cut the kale into smaller pieces. Fry a small portion of the seeds in a dry frying pan. Saute the parsnips and kohlrabi in the onion and a little cumin. Add the celery and garlic and cover with water. Season with salt, add the parsley.

When the Vegetable Recipes are cooked (not boiled), drain the mixture and throw it into a blender. Add the kale, peas, zucchini and blend with the hemp seeds until smooth.

If it is too thick, add the stock from the leftover broth(after straining). Pour into a plate and sprinkle with toasted hemp seeds. I garnished mine with a little fresh thyme.

TIP: you can add butter or ricotta to the soup while blending …I wanted it in this vegan version.
