Recipe preparation steps
1 Whisk the egg whites with the snow and divide them in half. Whisk together the egg yolks, butter, icing sugar and vanilla sugar, then gradually add the flour. Divide the dough in half, add the cocoa to one half and the snow to both. Divide the greased baking tray with foil, spread both doughs on half the tray and bake. 2 Caramelise the sugar, add the water, add the rum and stir. Pour the mixture over both pastry cases and spread the jam over them. Make a thickening of the water, the maize and the sugar, add the rum to the lukewarm water and spread it over the jam. Cut the two pastry sheets in half, alternately place them on top of each other and cut them into small cubes. 3 Make a mound of the cubes on the plates, fill with the glaze (prepared in a water bath), sprinkle with raisins and almonds and decorate with whipped cream.
