Wash and boil the potatoes in their skins. Peel, mash, add salt, egg yolk, flour, water and make a dough.

Form the dough into a loaf, take a piece of it, on a floured board make a long string as thick as a thick finger, cut it into 1 to 2 cm long pieces and again on the board with the palms of your hands make them into gnocchi.

Cook them in salted water, take them out, pour melted butter over them and sprinkle them with ground poppy seeds and sugar. They can also be served sprinkled with poppy seeds and drizzled with sugar or honey water or marmalade.
