If you do not want to miss baking cakes even on warm days, you should try the following recipe. We „hide“ brigadeiros (Brazilian chocolates made from condensed milk, butter and cocoa) inside a cake and add a deliciously refreshing mango cream. In the end, the cake looks like a sunflower. Can there be a more fitting cake look for the summer?
For this you need:
Für the cake batter:
280 g flour, type 405 100 ml mango juice concentrate 100 ml milk 1 pinch of salt 200 g sugar 100 g vegetableöl 20 g baking powder 2 eggs margarine or butter to grease the mold ring mold, diameter: 24 cm
For the brigadeiros:
30 g butter 400 g condensed milk 40 g cocoa powder
For the mango cream:
2 large, ripe mangoes 1 tbsp. cornflour 400 ml liquid (water, juice or. Ä.) 250 ml condensed milk
So it goes:
1. First, you prepare the dough. Beat sugar with Öl and the two eggs until foamy (about 5 minutes). Then add mango juice, milk, flour, baking powder and a pinch of salt and mix until smooth. Pour the batter into a greased cake pan.
2. Now prepare the brigadeiros. Melt butter in a pan and add condensed milk and cocoa powder. Heat everything together, stirring constantly, until it reaches a creamy consistency. (Caution: The cream burns quickly.) Let the cream cool and solidify on a plate. Roll about 12 balls from the cream. Then turn them all around in cocoa powder.
3. Sink the brigadeiros in the batter in the cake pan. Put the cake pan in the oven at 180 °C top and bottom heat for 30 minutes. While the cake is still warm, strain it and let it cool completely.
4. While the cake is cooling, you can make the mango cream. Peel mangoes, chop them and put them in a pot. Mix the cornflour with the liquid (water or juice) and add it to the mangoes in the pot. Cook the fruit, stirring occasionally so that nothing burns. Add condensed milk at the end. Process everything with a blender and pass the cream through a sieve. Let the cream cool completely and then pour it over the cake when serving. Fill the center with chocolate sprinkles, so that the cake looks like a sunflower.
